The Azores being a region of volcanic origin, it would be normal for its gastronomic products to also cause an explosion of flavours in the palate of those who consume them.
It is in this sense that today we will talk about the Azorean Pineapple, an authentic symbol of Azorean culture.
The Pineapple began as a production alternative to the orange that was one of the engines of export in the region, but was severely affected with a disease called gum disease, leading to its massive decay.
Everything indicates that the pineapple was discovered by the Portuguese at the time of colonization of Brazil. It started as a fruit of cultural experience and also of botanical admiration, due to its shape and crown.
The Azores Pineapple is produced in whitewashed glass greenhouses, using traditional cultivation techniques such as: the application of smoke and the use of warm beds, based on organic and vegetable matter, which translates into a fruit with unique qualities of aroma and taste.
Its production, initially, starts in a greenhouse with a temperature around 38º degrees, where the bulbs of plants that have already borne fruit, known as “burrows”, are planted.
