The authentic "Queijo do Vale" is handmade, using milk from the owner´s own farm, where their cows thrive on the green Azorean nature of the "Vale da Logoa Seca".
The cheese is unique for its brine, which is made with carbonated water from springs in Furnas, also Know as Sour Water, collected directly from the hydrothermal field of Furnas.
